“Shino” is a word in the Kumamoto dialect that expresses the joy and gratitude for the harvest. It was combined with the word, “Jinomono (local food),” to form the restaurant’s name, “Shinojino.” True to its name, the restaurant offers a rich selection of Kumamoto’s meats, vegetables, and fruits. The beef on offer is “WAOH,” a premium Kumamoto wagyu beef. A must-try is the unique basket-steamed beef, which allows just the right amount of fat to drip off, resulting in a succulent flavor.
