“Hida Kotteushi” is a rare Hida beef nigirisushi specialist restaurant. The sushi, which you can also takeout, is served up on (believe it or not) handmade rice crackers. It is a popular restaurant for people who like to take their food casually while walking. The recommended dish is “Otokuna 3 Shumori”, a budget-for-money assortment of three types . There are a number of deeply flavorable dishes such as cooking with bamboo charcoal salt to bring out the meat’s original umami taste, or ginger soy sauce for a light refreshing flavor, and “Hida Beef Gunkan” which is exquisitely matched with egg yolk.
