There is a certain cattle of which only a limited number of the whole animal can be bought, and that is exclusive of female cattle which have been fattened for over 30 months to produce meat with an umami (taste) that is rich and thick. As such, the “Sendai beef” has been selected with care by this restaurant to serve up to its customers. Beneath the flavorful steak and yakiniku there is just a simple seasoning of salt and pepper. By carefully cooking the meat over a charcoal fire the restaurant maximize the good flavor of the meat.
