Beef Shigure-ni Temaki Sushi

Temaki Sushi is a type of sushi, in which vinegared rice is spread on nori seaweed, topped with filling, then rolled. Shigure-ni is a kind of tsukudani simmered in sugar and soy sauce for a salty-sweet flavor. While sushi is normally made with seafood, beef also complements it well. This dish is not eaten with soy sauce, as the filling is already seasoned.

Ingredients(Serves 2)

[Vinegared Rice]

  • 400 g rice
     
  • 400 ml water
     
  • Seasoning A (40 ml vinegar, 10 g salt, 20 g sugar, mixed well)
     

[Beef Shigure-ni]

  • 150 g beef (top-round, gooseneck-round), thinly sliced into bite-sized pieces
     
  • 20 ml soy sauce
     
  • 20 ml mirin
     
  • 1 tsp sugar
     

[Filling for Temaki Sushi]

  • 5 leaves lettuce, torn into bite-sized pieces
     
  • 1 cucumber, cut into sticks
     
  • 1/4onion (thinly sliced, rub with salt, let stand for 5-10 minutes, wash with running water and squeeze dry)
     
  • 2 eggs (beat, add sugar and salt, make an omelet and divide into 6 portions)
     
  • 1 tbsp sugar
     
  • 1/2 tsp salt
     
  • 6 sheets of nori seaweed (19 cm x 10 cm)
     

Directions

  1. 1.Put the beef, soy sauce, mirin, and sugar in a small pot, and fry until no liquid remains.
  2. 2.Pour Seasoning A over hot white rice, mix uniformly, then cool the vinegared rice.
  3. 3.Place a thin even layer of vinegared rice on the seaweed, top with the filling and the beef shigure-ni, roll with your hands, and enjoy.
